Egg Bhurji - India


Egg Bhurji

Ingredients 

4 eggs
1 tsp oil
1 medium size onion chopped fine

1 green chilli chopped fine (optional)
1 tablespoon of chopped coriander leaves (optional)

salt and pepper to taste

Procedure


  1. Break the eggs in a bowl.
  2. Add some salt for taste. 
  3. Add the chopped coriander (optional).
  4. Beat the egg mixture lightly.
  5. Heat oil in a pan and add onions and green chillies (optional).
  6. Saute for a few minutes.
  7. Add the egg mixture to the pan. Keep the heat high.
  8. Keep stirring the mixture in the pan so that it breaks into pieces(you don't have a single omlette then).
  9. Serve hot with bread. 


Top tip: Tomato sauce tastes really good with the egg bhurji.
