Egg Bhurji
Ingredients
4 eggs1 tsp oil
1 medium size onion chopped fine
1 green chilli chopped fine (optional)
1 tablespoon of chopped coriander leaves (optional)
salt and pepper to taste
Procedure
- Break the eggs in a bowl.
- Add some salt for taste.
- Add the chopped coriander (optional).
- Beat the egg mixture lightly.
- Heat oil in a pan and add onions and green chillies (optional).
- Saute for a few minutes.
- Add the egg mixture to the pan. Keep the heat high.
- Keep stirring the mixture in the pan so that it breaks into pieces(you don't have a single omlette then).
- Serve hot with bread.
Top tip: Tomato sauce tastes really good with the egg bhurji.
