Ochazuke (Rice with hot green tea) - Japan

Ingredients


Half a fillet of salmon

1 cup cooked rice

1 tsp. shredded nori sheet (dried laver seaweed)

1/4 tsp. roasted white sesame seeds

A little wasabi (green horseradish paste)  *Optional

A little salt

1 green tea bag

 

Procedure


1.     Salt salmon and leave it for a while.

2.     Grill salmon.

3.     Remove skin and bones from salmon and flake the flesh.

4.     Scoop rice into a bowl.

5.     Put salmon, nori, sesame seeds and wasabi on the rice.

6.     Make a cup of green tea with hot water.

7.     Pour the tea into the rice bowl.
 
 
*Ochazuke is eaten at the end of dinner or as a light meal.

Fabulous Fish Pie

Mary Berry's Fish Pie

Fish pie is a firm favourite in our family.  It's a very easy way to prepare and serve fish and this recipe is quite simple to follow.  We serve this with peas or any green vegetable.  Prawns can also be added if you wish.


Ingredients

75g/3oz butter, plus extra for greasing
1 large onion, roughly chopped
50g/2oz plain flour
570ml/1 pint milk
salt and freshly ground black pepper
2 tbsp lemon juice
350g/12oz fresh haddock, cut into 1cm/½in pieces
350g /12oz smoked undyed haddock, cut into 1cm/½in pieces
4 hard-boiled free-range eggs, roughly chopped
For the topping
900g/2lb potatoes, peeled and cut into even-sized pieces
about 8 tbsp hot milk
about 50g/2oz butter

Preparation method

Preheat the oven 200C/400F/Gas 6. Grease a shallow 2.5 litre/4½pint dish with butter.
Melt the butter in a pan on a high heat and fry onion for few minutes. Lower the heat, cover and leave to soften for 15 minutes.
Remove the lid and increase the heat to remove any moisture. Sprinkle in the flour and then add the milk gradually, stirring well and allowing the sauce to thicken until all the milk has been added.
Season with salt and freshly ground black pepper, add lemon juice and the raw fish and cook for couple of minutes, stirring continuously until the fish has just cooked. Stir in the smoked haddock. Pour the mixture into the buttered dish and leave to cool. Top with the hard-boiled eggs.
For the topping, boil the potatoes in a pan of salted water until tender. Drain, tip the potatoes back into the pan, add milk and butter and mash until lump-free. Use a ricer to get smooth mash. Add salt and freshly ground black pepper to taste.
Spread the mash over the top of the sauce and fish in the dish and score with a fork.
Bake in the preheated oven for about 30 minutes, or until the potato is crisp and golden-brown.

Egg Bhurji - India


Egg Bhurji

Ingredients 

4 eggs
1 tsp oil
1 medium size onion chopped fine

1 green chilli chopped fine (optional)
1 tablespoon of chopped coriander leaves (optional)

salt and pepper to taste

Procedure


  1. Break the eggs in a bowl.
  2. Add some salt for taste. 
  3. Add the chopped coriander (optional).
  4. Beat the egg mixture lightly.
  5. Heat oil in a pan and add onions and green chillies (optional).
  6. Saute for a few minutes.
  7. Add the egg mixture to the pan. Keep the heat high.
  8. Keep stirring the mixture in the pan so that it breaks into pieces(you don't have a single omlette then).
  9. Serve hot with bread. 


Top tip: Tomato sauce tastes really good with the egg bhurji.
